Positano is the home of good food …. The quality of local products is incomparable and you should try all the specialities, especially the excellent sea food. Provided each morning by local fishermen you can be sure to find always fresh fish and seafood in the restaurants of Positano. But of course you also can create your Mediterranean dish at home! This recipe proofs once again that often the simplest things are the most delicious.

It is a dish typical of the Amalfi Coast, more precisely of Positano.

Ingredients for 4 persons:

320 g pasta („tubetti“ from Gragnano)

500 g fresh squid

a clove of garlic

extra virgin olive oil

10 cherrytomatoes from the area around Mount Vesuvius

parsley

salt

Clean the squid and cut into small cubes.

In a pan fry the garlic with the olive oil, then add the squid and cover with a lid.

After a few minutes add the tomatoes from Mount Vesuvius. Cook until the squid becomes mellow; crumple the tomatoes.

In the meanwhile boil the pasta in salted water until it is „al dente“. Add the sauce. Allow to rest for few minutes the pan. Add a little bit of olive oil and chopped parsley.

Enjoy your meal with a nice glass of white wine!
